Introduction
Old And New Recipes is a collection of recipes that I have invented (maybe reinvented) or simplified or improved; it also includes two pages of my Food and Kitchen Tips and Opinions. Many of these recipes I use constantly; some of them I make primarily for special occasions or at certain times of the year. Some of them include the best way--or different ways--to make some things that you may already know. They were specifically written to be clear, precise, and easy to make. This is not a cookbook stuffed with recipes that you will never want to eat. For a quicker list of the contents of the book, see the

Descriptions Of Recipes
Drinks
- Punch - A softly carbonated, smooth punch made with orange juice and green tea.
- Punch 2 - Another way to make a unique punch for anytime.
- Punch 3 - A carbonated black cherry cream flavored punch made from Kool-Aid. It took several tries to get this one right.
- Egg Nog - Exceedingly easy to make; a simpler taste then store-bought--and much, much cheaper.
- Mint Julep - Based on my memory of this drink that they make at Disneyland. I searched the Internet for a good recipe for this, but I had to make my own version because none of the others were true to the original as I remember it.
- Spiced Cider - Some people like it; some do not. This is made to serve hot, but I like it best cold. It is one of the easiest things that you can make in your crock pot.
- Pepsi Iced Tea - It is either more interesting iced tea or more interesting Pepsi.
- Spiced Cider 2 - A different, slightly non-traditional recipe for spiced cider. I created this when I was missing some of the ingredients for my usual spiced cider.
- Instant Kool-Aid Mix - Make Kool-Aid one glass at a time inexpensively.
- Tim's Graveyard Soda - A soft drink combination I used to drink all the time when I worked at McDonald's.
- Melted Root Beer Float - The best part of a root beer float is really what is left after the ice cream melts, right? Well, this recipe is how to make it all that way in the first place.
- How To Make Kool-Aid - Better Kool-Aid.
- Tim's Recipe For Orange Juice - Not quite Orange Julius, but better than many of the clone recipes that I have tried--maybe because I was not trying to duplicate Orange Julius with this recipe.

Variations Of Milk And Chocolate Milk
- Vanilla Milk - A simpler, cleaner taste than the store-bought versions.
- Banana Milk - I thought this would be hard to make, but it was easy.
- Strawberry Milk - Strawberry-flavored milk made from scratch.
- Perfect Chocolate Milk - The proportions and the methods to make better chocolate milk than ever.
- Chocolate Orange Mint Milk - Mint and orange flavored chocolate milk.
- Chocolate-Marshmallow Milk - One of the things that I make all the time.
Desserts
- S'mores - Developed through trial and error, this is the way to make s'mores quickly in a microwave oven.
- Brownies - Finally a brownie recipe that turns out right for me! Easy to make, one-bowl recipe.
- Mincemeat - I could not find a good recipe for real mincemeat, for pie, like my great grandmother used to make. I researched old cookbooks and came up with this after throwing out the ideas I did not like and keeping those that I did like. I think that this recipe is true to the spirit of my great grandmother's mincemeat.
- Cheesecake - A very light and mild cheesecake, similar in consistency to a Sara Lee® French Cheesecake. I could not find a recipe for the cheesecake I wanted to make, so I created this one.
- Banana Split - A precise guide to making a banana split.
- Rice Dessert - A simple stove-top dessert made with rice.
- Apple Crisp 1 - Apple Crisp like my grandmother used to make.
- Apple Crisp 2 - Another, different version of apple crisp like my grandmother used to make.
- Lemon Mousse - Not like lemon meringue pie; more like a light lemon-flavored ice cream. Breyer's used to make Lemon Sorbet Ice Cream; I tried to make this lemon mousse taste like that.
- Snickerdoodles - A simple recipe for the cookie that everyone seems to like--but for some reason it does not get made as often as some other kinds of cookies.
- Cocada Pudding - A light coconut pudding like I have only seen in TV dinners. I could not find a decent recipe for this so I had to create this one.
- Tapioca Pudding - Just try to find an easier recipe for making this from scratch without using the quick-cooking kind.
- Vanilla Ice Cream - How to get the ingredients for this just right.
- Chocolate Mousse - The easiest to make mousse ever. All the glamour of mousse with less of the effort of making it.
- Chocolate Pudding - Homemade, simple to make, much cheaper that store-bought - and no artificial flavors or colors.
- Chocolate Shortcake - Yes, you can make this without strawberries--and it is good this way too.
- Cinnamon Roll Mousse - Mousse that tastes like a cinnamon roll.
- Orange Cream Soda Ice Cream - A very light tasting and creamy orange-flavored ice cream.
- Lemon Sour Cream Cheesecake - A unique combination of Lemon Mousse and Cheesecake.
Salads And Jell-O
- Cole Slaw - My recipe for cole slaw.
- Fruit Salad - An easy--and good--fruit salad.
- Taco Salad - Easy to make. Different than most taco salads. You will not need anything else for dinner.
- Fruit Salad 2 - A fruit salad that my father used to make.
- Lime Jell-O Salad - Sort of like my grandmother used to make, but just a little different than you may have had before.
- Pineapple Salad Dressing - A pineapple flavored fruit salad dressing and dip.
- Strawberry Cream Jell-O - A new way to make a Jell-O dessert.

- Philly Cheesesteak - Philly Cheesesteak - You will like it. Make plenty of them.
- Roast Pork Sandwich - How I make this sandwich differently.
- Chicken Salad Sandwich - Fancy/simple recipe for chicken salad sandwiches. A good substitute for tuna fish sandwiches.
- Perfect Turkey Sandwich - My ideas for a perfect turkey sandwich combined with my father's ideas of how to make one.
- Bacon & Tomato Sandwich--Like a BLT--but I like it better without the lettuce. This is how I make mine and it is good.
- Hot & Cold Ham Sandwich - A new way to put together a ham sandwich.

Breakfast
- French Toast - The precise proportions of ingredients to make every batch of French Toast a good one. Better than just throwing things together.
- Breakfast Sandwich - Classic ham and egg and cheese sandwich on a hamburger bun--but you have to make it right to make it good.
- Frozen French Toast - Make French Toast ahead of time and just take it out of the freezer to heat up whenever you want it. Convenient for feeding a crowd.
- Orange French Toast - French Toast made with orange juice? I was surprised how well this worked when I first made it.
- Coddled Eggs & Toast - An old way to make eggs with toast.
- Fast Food Style Omelet - Something we used to make at McDonald's.
- Tim's English Muffin Recipe - The best recipe for an English muffin breakfast.
- Eggless Breakfast Sandwich - Just right to have for breakfast. You will not miss the egg!
Main Dishes
- Chili - An uncomplicated recipe that I make often. Not too hot and not too mild.
- Soup - Soup made from scratch without stock. You can vary the ingredients in this one, but try my version first.
- Lasagna - A straightforward recipe for a gourmet dish.
- Spaghetti Sauce - Why use store-bought spaghetti sauce when you can make your own?
- Hamburger Soup - I think that they would have liked this soup back in the Middle Ages. Plain but with a lot of flavor and good ingredients.
- Green Pepper Steak - Only barbecued steak is better than this.
- Oven-Baked Hot Dogs - Better than boiled; almost as good as barbecued. The way to make hot dogs indoors.
- Fancy Oven-Baked Hot Dogs - A serious approach to making a gourmet hot dog.
- Roasted Boneless Chicken Breasts - A very easy and good way to make these.
Other Recipes
- Oatmeal - You do not need instant oatmeal to cook it in the microwave. The proportions are important in making the recipe work. If you like oatmeal but do not like the effort that can be involved in making it, then here is a recipe that you will like to use.
- Pie Crust - This pie crust recipe is made using corn oil instead of shortening, butter or lard. I find it to be the best and easiest to make pie crust I have ever made.
- Red Beans - How to cook red beans from scratch without having to soak them overnight and without having to drain them at any point (so you do not have to dump any food value down the drain). This is the recipe that I use for my chili recipe. The beans alone are good enough to eat by themselves; and they could easily be incorporated into other dishes such as baked beans, pork and beans, or ham and beans.
- Texas Toast - You have heard of Texas Toast. I did not invent it; but here is how I make it at home--with four variations of the basic recipe.
- Tartar Sauce - A simple and quick way to make tartar sauce. It is the only homemade tartar sauce I like.
- Fried Apples - Just like my grandmother used to make. Even easier to make than apple sauce.
- Banana Bread - This turns out good every time I make it. An easy recipe to use. No more wasted bananas.
- Apple Sauce 1 - Apple sauce made the way my grandmother used to make it.
- Apple Sauce 2 - Apple sauce made a little differently, from a very old recipe.
- Apple Sauce 3 - A unique way to make apple sauce like my grandmother used to make.
- Rhubarb Sauce - As easy to make as apple sauce. A good topping for vanilla ice cream or french toast or pancakes.
- Cheesy Noodles - A from-scratch, stovetop alternative to packaged macaroni and cheese. Simple and easy to make.
- Cranberry Sauce - I won a blue ribbon for this at the local county fair.
- Broiled Tomatoes - When I was growing up we used to have these once in a while. No one seems to make them anymore. Many people do not like cooked tomatoes; if they try these they might learn to like them.
- Grapefruit Chunks - You will learn to like grapefruit.
- Perfect White Rice - You do not need to buy a rice cooker to make good rice. Just use this recipe.
- Tortilla With Cheese - One of the easiest things I make.
- Smashed Bread Pizza - If you really do not want to wait for the pizza to be delivered. After I first made this, I ended up making it for lunch 3 days in a row!
- Unpeeled Apple Sauce - A very different variation of apple sauce. The peel adds flavor and sweetness.
- Whole Berry Cranberry Sauce - Cranberry sauce made the old-fashioned way--and the easiest and fastest way to make it.
